Ingredients
  

  • 4 pkts Udon noodles
  • 1 Onion, finley chopped
  • 4 Garlic cloves
  • 600 grams Ground meat Pork, beef, chicken
  • 2 tbsp Oil
  • Stir fry vegetables (e.g. cabbage, carrot, spring onion, mushroom)
  • ΒΌ cup Coriander leaves, chopped
  • Fish sauce to serve
Yaki Udon Sauce
  • 3 tbsp Soy sauce light
  • 4 tbsp Oyster sauce
  • 2 tbsp Mirin
  • 4 tsp Brown sugar
  • 1 tsp Rice wine vinegar

Method
 

  1. Mix all the ingredients for the sauce in a small bowl and set aside.
  2. Add udon noodles to a pot of boiling water until separated and pliable. This should take 1 - 2 minutes. Don't overcook.
  3. Heat a pan or wok over high heat and add the oil. Add in the ground meat and stir fry until almost cooked. Remove and set aside.
    Add oil to the same pan and cook the onions until soft, add garlic and cook for one more minute. Add the vegetables and stir fry until al dente. Return the meat to the pan with the sauce and continue stir frying for a few minutes or until well combined.
  4. Divide udon noodles into bowls, add the meat mixture and gently combine. Add a splash of fish sauce and serve immediately with a scattering of spring onion, coriander, and chilli if you like.
