Ingredients
  

  • 10 Lemons Substitute limes or a mix of both
  • 1 litre Vodka
  • 2 cups Sugar
  • 4 cups Water

Method
 

  1. Zest the lemons by either grating or peeling. Try and avoid the white “pith” below the yellow or green skin as this can make you limoncello taste bitter.
  2. Place zest into a large glass mixing bowl or similar. Pour in vodka. Cover and let infuse for one week at room temperature.
  3. After one week, combine sugar and water in a medium saucepan. Bring to a boil. DO NOT STIR. Boil for 15 minutes. Allow syrup to cool to room temperature.
  4. Combine vodka and syrup mixture. Strain into glass bottle(s), and seal. Let mixture age for 1 week at room temperature.
  5. Place bottled limoncello in fridge and serve cool, poured over ice if you prefer.
