Asian Chicken Drumsticks

Ingredients
  

Asian Sauce
  • ¼ cup Soy sauce
  • ¼ cup Chinese rice wine
  • 2 Tbsp Lime juice
  • 2 Tbsp Fish sauce
  • 1 Tbsp Grated fresh ginger
  • 2 Tbsp Brown sugar
  • 1 cup Chicken stock
  • 2 Star anise
  • 1 Cinnamon stick
Chicken and Garnishes
  • 2 Tbsp Peanut oil
  • 6 Chicken drumsticks
  • 4 Spring onions sliced
  • ¼ cup Mint leaves
  • ¼ cup Coriander leaves
  • Sliced fresh chilli Optional

Method
 

  1. Heat oven to 180℃
  2. Place the sauce ingredients in a saucepan over a medium heat and cook until slightly thickened.
  3. Meanwhile, coat the chicken drumsticks in a little oil and place in a roasting tray in the oven. Cook until almost done, turning once so they are evenly browned.
  4. Pour the sauce over the chicken and return to the oven. Cook until chicken is done and sauce has become thick and sticky.
  5. Serve with rice and chopped greens scattered over. If you like it hot include sliced chilli.
