Asian Chicken Drumsticks

Ingredients

Asian Sauce

  • ¼ cup Soy sauce
  • ¼ cup Chinese rice wine
  • 2 Tbsp Lime juice
  • 2 Tbsp Fish sauce
  • 1 Tbsp Grated fresh ginger
  • 2 Tbsp Brown sugar
  • 1 cup Chicken stock
  • 2 Star anise
  • 1 Cinnamon stick

Chicken and Garnishes

  • 2 Tbsp Peanut oil
  • 6 Chicken drumsticks
  • 4 Spring onions sliced
  • ¼ cup Mint leaves
  • ¼ cup Coriander leaves
  • Sliced fresh chilli Optional

Instructions

  • Heat oven to 180℃
  • Place the sauce ingredients in a saucepan over a medium heat and cook until slightly thickened.
  • Meanwhile, coat the chicken drumsticks in a little oil and place in a roasting tray in the oven. Cook until almost done, turning once so they are evenly browned.
  • Pour the sauce over the chicken and return to the oven. Cook until chicken is done and sauce has become thick and sticky.
  • Serve with rice and chopped greens scattered over. If you like it hot include sliced chilli.
