These mini pies are great for picnics and outings. We call them "Boat Pies" as they are easy to eat with one hand leaving the other for sailing!

Mini Bacon & Egg Pies

Ingredients

  • Store bought pastry I use one sheet
  • 1 Onion
  • 200 grams Bacon
  • 1 cup Grated cheese
  • 2 Eggs
  • ½ cup Sour cream or yoghurt
  • ¼ cup Milk
  • 1 tbsp Flour
  • ¼ tsp Salt
  • 1 tsp Dijon mustard

Instructions

  • Roughly chop onion and sauté until soft in a little butter. Roll out pastry very thin and line greased muffin tins.
  • Spoon in onion mixture equally between pies and then do the same with raw bacon pieces and grated cheese. The more bacon you use the less salt required in the following process.
  • Whisk together the remaining 6 ingredients and spoon over the bacon, onion and cheese. Cook at 220 ℃ for about 30 minutes.
